5 Pepper Cornbread Muffins


Ingredients:
  • 2/3  cup  butter
  • 1/2  cup  granulated sugar
  • 3  eggs
  • 1 2/3  cups milk
  • 1 1/3  cups all purpose flour
  • 1  cup  cornmeal
  • 4 1/2  teaspoon  baking powder
  • 1  teaspoon  salt
  • 1  jar Kozlowski Farms Organic 5 Pepper Jam
Directions:
Preheat oven to 400 F.

Grease muffin pan, set aside. In a mixing bowl, cream butter and sugar. Combine eggs and milk. In a separate bowl, combine flour, cornmeal, baking powder and salt. Add egg and cornmeal mixtures alternately to butter and sugar mixture. Pour evenly into greased muffin pan. Place 1 dollop, about 1/2 tsp., of Kozlowski Farms Organic 5 Pepper Jam into each muffin cup of batter. Bake 18 to 20 minutes or until tops are lightly golden and a toothpick inserted in center comes out clean. Cool in muffin pan for 5 minutes, then transfer to wire rack to cool completely.
